2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup ripe banana - mashed
1/2 cup plain Greek yogurt
8 Tbsps unsalted butter
1/2 cup granulated sugar
1/2 cup golden brown sugar - packed
1 large egg
1/2 tsp ground cinnamon
nutella mascarpone frosting
Instructions
1. Preheat oven to 350 degrees. Lightly butter a Wilton heart-shaped whoopie pie pan. Sift flour, baking powder, baking soda,cinnamon, and salt into a bowl. Combine banana and yogurt in another bowl.2. Beat butter and sugars with a mixer on medium-high speed, until pale and creamy, about 3 minutes. Add egg, beating until incorporated. Add banana mixture in 2 additions, alternating with flour mixture.3. Place 1 1/2 - 2 Tbsps of batter into each heart-shaped well. Spread to fill with an angled spatula.4. Bake until edges are golden, about 10-12 minutes. Let cool for 5 minutes before transferring to wire racks to cool completely. Butter the pan again and bake another batch of cookies.5. Pipe or spoon 1-2 tablespoon Nutella Mascarpone mixture onto the flat sides of half the cookies. Sandwich with remaining cookies.
